As our slogan says, this is where good food meets special needs. We are dedicated to sharing information, techniques, and recipes to meet special needs, such as gluten free and type 1 diabetes. In fact, over time, we will grow to include all food sensitivities and special diet considerations. So, take some time to explore and get involved. Let us know what is helpful and what you would like us to add.
Food sensitivities are on the rise with issues ranging from life threatening allergies to possible links to behavioral problems. So, too, is the incidence of Type 1 Diabetes (insulin dependent), and not just for children. Taken together, these represent special needs when it comes to food.
For the Type 1 Diabetic, knowledge about the food consumed, especially the carbohydrate amount in a serving is critical to properly dosing insulin and maintaining safe blood glucose levels. For those faced with food sensitivities, knowledge about the ingredients (often not obvious) is critical to avoid negative and sometimes very serious reactions.
George's Cookbook is a resource, and growing community, to help individuals and families dealing with these types of dietary and lifestyle special needs.
George Smith was a happy, healthy, 9 year old boy living in Longmont, Colorado and attending 4th grade. He was involved in Scouts, Tae Kwon Do, and church activities. He had never been sick a day in his life (though he did break his arm once in a bicycle accident).
In late November 2006, he started going to the bathroom a lot more and drinking water (which he hated). George's mom took him to the doctor for a physical and she requested that blood tests be taken. After the physical, the doctor said he was a strong, very healthy boy and to call back in two weeks.
