Welcome to our Books section. Here you will find information about our current publications as well as those that are in development. These books that can be used anytime and anywhere. Currently we have two books available. The Camping book is available in both print and eBook formats. The For Kids with Diabetes book is available in print only and requires special ordering. For details on both, check out their pages.
George's Cookbook for Kids with Diabetes was created to help newly diagnosed Type 1 families answer the question "What do we feed our child?" While it is suitable for any family, the goal is for every newly diagnosed family to have a copy. It was compiled by Annette Hobbs with assistance from George.
If you know a newly diagnosed family please order a copy for them. If you are interested in helping to provide a copy to newly diagnosed families through an organization like the Guild of the Childrens' Diabetes Foundation, please contact us. Over the last two years, several hundred families have received copies through the work of the Guild.
George's Cookbook: Camping is a one-stop resource for gluten-free and type 1 families wanting to eat well and participate in outdoor activities like camping. The first five chapters provide basic information to get started. Chapters six through twelve are filled with wonderful and easy recipes. The appendices provide a number of useful tools such as planning forms and checklists and lists of gluten-free ingredients and substitutions.
The book is a spiral bound, 3 X 5 (recipe card) size with built in easel stand. It is designed to standup on the counter or table for ease of use. Further, the colors and pages are simple in order to help children learn to cook.
On December 5, 2006, George was diagnosed with Type 1 Diabetes.
We, his parents, were in shock! And, at 9, George really did not understand (though he does now).
We learned that treatment involved insulin, counting carbohydrates (carbs), and frequently checking blood glucose levels. But, that was only intellectual and we did not really understand that part till much later. Instead, one of our biggest questions was:
What do we feed George?
Because George's Cookbook for Kids with Diabetes was privately printed, it is not available for online ordering. Instead, to order your copy of the cookbook, print the order form (PDF file) and mail it along with your payment in US funds to the address on the form.
Basic Background Information
The first five chapters provide basic background information about type 1 diabetes and gluten-free requirements as they relate to outdoor activity. They also provide a primer on cooking for outdoor activities – types of fire, utensils, etc. And, the process of planning a menu that is flexible and accounts for special dietary needs is presented.
There are 18 recipes, all tested by George and Annette (see George's Story). Each recipe includes a list of ingredients (in blue), instructions for preparation (in green), and nutritional information including portion size and carb count (in black).
George's Snack Bars
For something sweet and full of energy on the trail, George likes this variation on the Rice Crispy Treat®. This one adds raisins, butterscotch (or chocolate) chips, and sometimes nuts. Note that while you can make these at camp, you may want to create them at home and bring them to the event. One batch makes about 20 bars.
