Basic Background Information

The first five chapters provide basic background information about type 1 diabetes and gluten-free requirements as they relate to outdoor activity. They also provide a primer on cooking for outdoor activities – types of fire, utensils, etc. And, the process of planning a menu that is flexible and accounts for special dietary needs is presented.

On December 5, 2006, George was diagnosed with Type 1 Diabetes.

We, his parents, were in shock! And, at 9, George really did not understand (though he does now).

We learned that treatment involved insulin, counting carbohydrates (carbs), and frequently checking blood glucose levels. But, that was only intellectual and we did not really understand that part till much later. Instead, one of our biggest questions was:

George's Snack Bars

For something sweet and full of energy on the trail, George likes this variation on the Rice Crispy Treat®. This one adds raisins, butterscotch (or chocolate) chips, and sometimes nuts. Note that while you can make these at camp, you may want to create them at home and bring them to the event. One batch makes about 20 bars.
