Basic Background Information

The first five chapters provide basic background information about type 1 diabetes and gluten-free requirements as they relate to outdoor activity. They also provide a primer on cooking for outdoor activities – types of fire, utensils, etc. And, the process of planning a menu that is flexible and accounts for special dietary needs is presented.

Each of the recipes is designed to make shopping, calculation of insulin dosing, modification, and preparation easy.

The ingredient list and the carb calculation are shown side-by-side at the beginning of the recipe. If you change ingredients, you can also make the appropriate change in the calculation. This will be of great benefit for any Type 1 Diabetic, while allowing for individual chef creativity.

Below the ingredients is the list of utensils and supplies that are needed to support dish preparation.

Finally, the instructions guide you step-by-step through preparation of the food.

The Appendices

The appendices provide additional information, such as lists of gluten-free ingredients and substitutions for food sensitivities. And forms to help you in your planning are included, such as meal planning and shopping lists.
