George's Snack Bars

For something sweet and full of energy on the trail, George likes this variation on the Rice Crispy Treat®. This one adds raisins, butterscotch (or chocolate) chips, and sometimes nuts. Note that while you can make these at camp, you may want to create them at home and bring them to the event. One batch makes about 20 bars.

  • 10 oz Marshmallows (note: most brand-names are supposed to be gluten-free, watch out for modified food starch as an ingredient)
  • 3 cups Puffed rice cereal
  • 1 cup Raisins
  • 1 cup Reeses Peanut Butter Chips
  • 1 cup Cashew pieces (optional – you may use any nut you like, peanuts, walnuts, almonds)
  • Cooking oil

Serving size 1 bar
1 cup raisins = 124 carbs
1 cup peanut butter chips = 122 carbs
1 cup cashew pieces = 32 carbs
3 cups puffed rice cereal = 42 carbs
10 oz marshmallows = 220
Total carbs = 540
Total carbs per serving =27 carbs

  • 1 large metal spoon
  • 1 medium to large pot
  • 1 large mixing bowl
  • 1 13x9 cake pan or baking dish
  • 1 metal spoon 11 metal spatula
  • Wax paper
  • Paper towels

Preparation

Grease the medium to large pot, the cake pan or baking dish, and the large bowl with oil. Be sure to coat both the bottom and the sides of each. This will make clean-up much easier. Then combine the puffed rice, raisins, peanut butter chips (or chips of your choice) and cashew pieces in the large bowl. Mix these thoroughly.

Heat the marshmallows and butter in the medium pot, stirring gently with the spoon until the marshmallow are melted and the mixture has a light orange or yellow color. Poor the liquid over the dry ingredients in the bowl and mix thoroughly. Remember, it will be sticky, so do your best.

Poor the final mixture in the cake pan or baking dish, leveling the mixture, and let it stand for 20 minutes. Using the spatula, cut into rectangular bars. One batch makes 20 bars.
